Cici is the calm one. She'll sit on your laptop during a Zoom call, stare at you with zero urgency, and remind you that whatever you're stressed about probably doesn't matter. She's the cheese in the Cacio e Pepe — smooth, essential, holds everything together.

The Pepe — Chief Chaos Officer

Pepe is the spice. He's the one who knocks things off tables with full eye contact, sprints through the house at 3 AM for no reason, and has opinions about everything. He's the black pepper — bold, unpredictable, makes everything better.

Why "Cacio e Pepe"?

Cacio e Pepe is a Roman pasta dish made with three ingredients: pasta, Pecorino Romano, and black pepper. No cream. No garlic. No shortcuts. Just technique and quality ingredients. It's the most honest dish in Italian cooking — nothing to hide behind.

That's the philosophy. Two cats, named after two ingredients, from a dish that proves you don't need complexity to create something beautiful. Also, they're orange and black, which is basically cheese and pepper colored. It was meant to be.

The Actual Recipe

Because you can't name cats after a dish and not share the recipe.

Cacio e Pepe

Serves 2 — 15 minutes — 3 ingredients

Ingredients

  • 200g spaghetti (or tonnarelli if you're serious)
  • 200g Pecorino Romano, finely grated
  • 2 tsp freshly cracked black pepper (coarse)
  • Pasta water (the secret ingredient)

Method

  1. Toast pepper in a dry pan until fragrant (30 seconds).
  2. Cook pasta in well-salted water. Save 2 cups of pasta water.
  3. Add a ladle of pasta water to the pepper pan.
  4. Toss drained pasta in the pan. Off heat, add Pecorino gradually, tossing constantly.
  5. Add pasta water as needed until creamy. Serve immediately.

The trick is the emulsion. Too hot and the cheese clumps. Too cold and it doesn't melt. Like most good things in life, it's about temperature and timing.
